This Chicken Loaf was so good that I made another the following day to enjoy. It is so flavorful and juicy, no need to do the following but to elevate the dish I heated up some bbq sauce adding a few drops of Sriracha, and drizzled on before serving, I love a little kick in my food. If you have extra sweet potato, cube & drizzle with blue agave, avocado oil & a dash of black pepper & sea salt, Bake until soft. Serve on the side, so yummy. Enjoy!
Ingredients: Preheat Oven 450 Degrees
16 ounce Ground Chicken
1/2 cup Panko
1/2 cup Shredded Cheddar Cheese
1 cup Shredded Sweet Potatoes, cube extra to bake for a side dish
5 medium size Mushrooms, roughly chopped
2 Green Onions, cut into small pieces
1/4 cup Egg white or 1 Large Egg, whisked
1 tsp Kinder "The Blend" or equal amounts making 1 tsp of garlic powder, black pepper & Sea salt
Couple dashes of Tabasco & Worcestershire Sauce
Top Loaf with Fresh cracked Black Pepper
Optional: Heat your favorite BBq sauce, drizzle on top before serving
Directions:
Loaf pan size 8,5 x 4,5 x 2,5 in. Prep with nonstick spray & set aside
Place all ingredients in a large bowl and mix altogether by hand
Put in prepared loaf pan, shaping and pressing making a dome shape on top
Bake 30-38 minutes
Can make a day ahead or if any leftovers, cool completely & refrigerate up to 4 days, Enjoy!
