Stuffing Waffles Topped with Cranberry Sauce

Step 1: Waffle Mix

Ingredients:

  1. Waffle mix, I use Bisquick

  2. 1 teaspoon Parsley, fresh chopped or dry

  3. 1 teaspoon Thyme, dry

  4. 1 teaspoon Sage, ground

  5. Freshly ground pepper, to taste

  6. Non-stick cooking spray and waffle iron

Directions:

  1. Follow the waffle mix recipe add in all herbs. Mix well.

  2. Preheat Waffle iron

Step 2: Stuffing

Leftover stuffing from Thanksgiving is perfect for day after to make waffles or make you favorite recipe for year round stuffing waffles.

Ingredients:

  1. 1/2 Stick of butter

  2. 3 Stalks celery, cut 1/4 inch pieces

  3. 1 Small onion, cut 1/4 inch pieces

  4. 1 1/2 teaspoon Sage, ground

  5. 1 1/2 teaspoon Thyme, dry

  6. 1 teaspoon Freshly ground black pepper

  7. 1 bag of Seasoned breadcrumbs

  8. 2 cups Chicken stock, extra if needed

  9. Turkey or chicken liver, fried in pan and cooked completely, cut into small pieces (optional)

  10. 1/2 cup Chestnuts, chopped small (optional)

  11. 1/2 cup dried Cranberries (optional)

  12. Non-stick cooking spray

Directions:

  1. In a large skillet, melt butter then add celery and onion, sauté until soft.

  2. In a large bowl mix celery, onions and all remaining ingredients.

  3. Spray large casserole dish with nonstick cooking spray, put bread mixture inside casserole dish lightly spreading out with a spatula.

  4. Bake for 30-40 minutes.

Preparing Waffles:

  1. Mix stuffing with waffle mix, making sure it's liberally coated.

  2. Spray waffle iron with nonstick cooking spray.

  3. Fill each space with a heap of stuffing mixture be careful not to overfill.

  4. Bake about 4-5 minutes and golden brown.

  5. Serve topped with homemade cranberry sauce.

Step 3: Fresh Cranberry Sauce

Ingredients:

  1. 1 Bag of Cranberry

  2. 1 small Orange, cut into small pieces (optional)

Directions:

  1. Prepare the amount of Cranberry you desire by following the instruction on bag.

  2. Add 1/2-1 fully cut small orange to cranberry when a rolling boil starts.

  3. Pull of heat and place in heat proof bowl, cool completely and refrigerate.

Drink recommendation: Mimosa - mix sparkling wine and desired amount of orange juice, garnish with slice of orange and or float frozen strawberry in champagne flute. Enjoy!
