Strawberry with a hint of OJ -Popsicle & More.....

Time to make your own fruit popsicles using the abundance of seasonal fruit that we have to choose from. Here's a very simple recipe in hopes to motivate you to make many other variety of popsicles. Not only is this a fun way to include your kids in the kitchen but a way for all of us to stay hydrated and have a healthy choice of a yummy snack. I love also saving money and knowing what I'm eating is organic and made with love. For an adult twist add your popsicle to a glass of bubbly, Enjoy!


Ingredients:

  • 3 Cups Fresh Organic Strawberries, roughly cut, set some aside to add later to popsicle mold

  • 1/4 cup granulated Sugar or Blue Agave

  • 1/2 cup Orange Juice

  • 1/4 cup Water

  • 2 TBSP Lemon Juice, freshly squeezed

  • Optional: Prosecco or any Bubbly

Directions:

  • Place fruit in a food processor or electric blender, pulse a few times to break down the fruit

  • Add the remaining ingredients and blend medium smooth, if you have extra pieces of strawberry set aside to add into the popsicle mold for more texture

  • fill popsicle mold 3/4 of the way full, the liquid will expand when frozen

  • Add lid and popsicle sticks

  • Place popsicle mold on a tray, put in freezer 5-6 hours or until completely frozen

  • Running warm water onto the bottom of mold to help loosen the

  • Remove popsicles from mold and Enjoy!

  • If you want an adult treat add your popsicle to a chilled Champagne glass full of your favorite bubbly.

I recommend the silicone popsicle mold, BPA-Free Find online or I found mine at HomeGoods
