"Sopa de Arroz aka Spanish Rice" by Denise Fogel

Sopa de Arroz , pronounced soap-ah day are-ohz. Translates to rice soup. This dish is traditionally served as a side dish, Sopa de arroz can be made with meats such as chicken for added flavor and substance.

Ingredients:

  1. 2 cups Long grain white rice

  2. 1 Garlic clove, roughly chopped

  3. 3/4 cups Green onions, cut into 1/2 inch pieces

  4. 1 Whole large firm tomato, chopped into 1/2 inch cubes

  5. 2 cups Chicken stock (Reserve additional 2 cups)

  6. Black pepper, to taste

Directions:

  1. Heat stove top to medium-high heat.

  2. Place large skillet on stove, adding 2 tablespoons of olive oil to skillet.

  3. Add garlic to skillet, followed by rice.

  4. Toast rice, stirring occasionally until lightly browned.

  5. Add onions and tomatoes to mixture.

  6. Add 2 cups of chicken stock to skillet, reducing heat to medium, medium-low and cover.

  7. Let rice steam 20-25 minutes. Do not stir rice,

  8. Add reserved chicken stock to make rice fluffy; use your judgment as to how much you will need, but no more than 2 cups.

  9. Add pepper to taste.

  10. Fluff rice with fork.

  11. Mix in remaining chicken stock. Stir until ingredients are evenly distributed.
