Savory Chicken Soup with Tofu or Chicken & Rice Noodles

I love all types of soup, something I make often for brunch, lunch or a starter for dinner. This asian inspired soup I made was savory & a touch of spice so delicious that it made my taste buds do a dance. I topped with tofu because that's what I had in the fridge, yes funny when I made a chicken base, you can use any broth base. also switch out the tofu and use chicken pieces if you desire. Here's a very simple way of making a beautiful full flavor soup that your friends and family will think took hours. Enjoy!
Ingredients: 4-6 servings
Organic Rice Noodles, I use Ocean Halo, follow directions amount to use per serving
Avocado oil, to drizzle
16 oz Firm Tofu or precooked chicken, cut into 1/2 inch pieces
4-6 cups Chicken broth, made with using Better Than Bouillon , reduced sodium
2 tsp Liquid Aminos or low Sodium Soy Sauce, to taste
1 Tbsp Hoisin Sauce, to taste
Sriracha, few drops, to taste
White Sesame Seeds, sprinkle on top of protein of choice, to garnish
Optional: Rice Seasoning, sprinkle on top
4-6 Green onions, cut small pieces, save some to garnish
Instructions:
In a large non stick fry pan, add a drizzle of avocado oil, heat on medium heat, add your cut protein of choice. add your liquid amino, hoisin. sriracha, fry until hot then add green onions and white sesame seeds (Saving some for garnish) gently stir to mix with all the ingredients.
In a separate pot add 4-6 cups of water then add 1 teaspoon of "Better Than Bouillon" per cup to water, (I used Chicken) mix and heat to a boil, then turn down to keep warm, set aside, when ready to build your soup.
Make your rice noodles while protein is cooking, follow the instructions per package, don't over cook noodles they only take 3 minutes to make,
Time to build: Serve family style or make individually using your favorite soup bowls. Pour in broth add the rice noodles, top with your protein and add fresh cut green onions and a dash of rice seasoning & a touch more white sesame seeds, finally dot on some sriracha. Ready to serve, Enjoy!
