Here's a great meal to make for Mother's day or frankly any time. The pork schnitzels are tender, juicy and the outside so crispy. We love these Schnitzels. A few side ideas to serve are potato salad, sauerkraut, apple sauce or cucumber salad....My husband Nick loves making Schnitzel sandwiches if we have any leftovers. Enjoy!
Ingredients:
2 lbs Thin cut Pork chops, trim off fat
1/3 cup Corn Starch
2 cups Panko
Optional: 2 Tbsp Parmesan
1 Tbsp Kinders-The Blend or equal parts Garlic powder & Seasalt
1/2 Paprika
1/2 tsp Ground Black Pepper
3 Eggs
Avocado oil or any high heat cooking oil to saute in
Lemon wedges
Directions:
Set up station with 3 shallow dishes: 1-cornstarch 2-beaten eggs 3-Panko, mix in parmesan, The Blend or seasoning, Paprika & Black pepper
Pound out the pork even more, Easiest if you put meat in between plastic wrap, pound out and set aside on a baking sheet
Dredge each cutlet in cornstarch, then egg, lastly Panko mixture, set aside prepped cutlets on a baking sheet, next step to fry
In a large non stick skillet add a shallow amount of avocado oil, heat on medium, Once oil is hot, add breaded cutlets and saute 3-4 minutes on each side, until golden brown
When cooking time is finished remove each cutlet and place on a rack
Serve with a side of lemon wedges
