
These Peanut Butter truffles are a bit like eating a Reese's Peanut Butter Cup but even more decadent. They are so easy to make and can be elevated by the sprinkles or edible glitter you choose to decorate the top with. I thought the perfect gift for Valentines day! I used an iridescent glitter with my batch, they turned out so pretty. Have fun creating yours and enjoy!
Ingredients: Makes approx. 42, 1 inch round truffles
1 /3 cup unsalted Butter, room temperature
2 cup= (5)Graham Crackers, finely ground
1 cup creamy Peanut Butter
1 tsp. Vanilla Extract
1 tsp. Sea Salt
2 cups Powdered Sugar
2 cups plus 1 cup Chocolate chips, milk, dark, white, whatever you prefer
Directions:
Prepare 2 baking trays with parchment paper, set aside
In a food processor place graham crackers and finely grind add butter and mix altogether
Add peanut butter, vanilla extract, sea salt & powdered sugar, blending until mixture is smooth
Using a small scoop or by hand take 1 inch round and make balls
Place on parchment covered baking tray, making approx. 42 balls
Place tray in freezer for 30 minutes
Melt 2 cups of chocolate chip, 40 second increments 3x, stirring in between each 40 seconds, after completely melted and smooth, get tray out of freezer
Dip each ball into chocolate and place on another tray with parchment paper, prepare 3 at a time and quickly add your sprinkles or glitter to top, you want to do this before top hardens, I use 2 forks to roll the balls in the melted chocolate this also makes it easier to lift out of bowl
When out of your first batch of melted chocolate heat up the last 1 cup and repeat the dipping process and topping
Let the truffles set, keep in an airtight container, I keep mine in the fridge
Serve on a special plate or put in a gift box.....Enjoy!
