Happy New Year!
I was thinking to start 2025 with a healthy and satisfying snack, so here's my granola bar recipe it sounded like the perfect recipe to share. These are so tasty, kids and adults go nuts for them, ha ha-no pun intended.
Individually wrap them for a grab and go snack. Keep refrigerated & Enjoy!
Ingredients:
1 cup creamy Peanut Butter
2/3 cup Honey
1 tsp Vanilla extract
1/2 tsp Sea salt
2 1/2 cup whole rolled Oats
2 Tbsp shelled Hemp Heart seeds
1/3 cup chopped Almond, use food processor
1/3 cup pitted Dates, chopped in food processor
1/3 cup mini dark chocolate chip, or if using lager chop in food processor
Direction:
Prepare 9x9 baking dish, line with parchment paper, set aside
In a large bowl mix peanut butter, honey & vanilla extract, using a non stick spatula mix until fully combined & smooth
add all remaining ingredients, mix altogether, mixture will take a bit to combine but will become bond and ready to pour into 9x9 dish
Pour mixture into dish, place parchment paper on top and press evenly & flat by hand then use the bottom of measuring cup to flatten more, making sure the mixture is even, cover with plastic wrap and refrigerate, keep minimum 2 hours before cutting can cut following day the longer the easier to cut & keep shape
Optional: Melt chocolate
Place chocolate chips in a microwavable bowl for a few 40 seconds intervals stir each time until completely melted, place in piping bag & drizzle on each bar, keep refrigerated & enjoy!
