Peanut Butter & Banana Popsicles

Love the Summer when it's hot and we need something fresh and cool to hydrate our bodies. Making homemade popsicles are what I do with seasonal fruits and ingredients readily available in my pantry & fridge. Here's a tasty healthy treat that adults & kids will enjoy, also a fun kid food project. Happy Summer!


Ingredients:

  • 2 large Bananas, overripe

  • 1/4 cup smooth Peanut Butter, you can use Almond Butter

  • 1/4 Milk, you can use Almond Milk

  • 1 1/2 cup Vanilla Yogurt, I use 4-4 oz Activia cups , you can use plain yogurt & add 1 tsp vanilla extract

  • 1-2 Tablespoons Honey or Maple syrup, to taste

  • Popsicle mold & Sticks



Directions:

  • In a food processor or blender, blend smooth bananas, peanut butter then add all remaining ingredients all together.

  • Pour into popsicle mold, keep at least 1 inch from top, they expand (I like using the silicone mold)

  • Place cover on then add your sticks, put mold on a small cookie tray, this helps to keep from tipping over and keep the ingredients straight while freezing.

  • Freeze 5-6 hours or longer.

  • To pop out popsicles, Place mold 1/2 way into a bowl of warm water, 3-5 minute wiggling them gently to release from the mold.

  • Makes 10 Popsicles

  • Serve immediately & Enjoy!
