Recipe by Chef Misty Rimassa of Elements Tasting Bar & Bistro
Ingredients:
12 Oysters, cleaned, shucked (Misty's recommendation: Use Blue Point Oysters)
Baby spinach, washed and dried
Alfredo sauce (Recipe for sauce below, store-bought will also work)
Mozzarella, grated
Precooked Bacon, finely chopped
Directions:
Preheat oven to 400 degrees.
Shuck oysters with an oyster knife or small paring knife.
Rinse and dry shells.
Place on baking sheet.
Add 3-4 leaves of spinach into each shell.
Replace oyster into shell.
Cover oysters in Alfredo Sauce.
Grate mozzarella and place over oysters.
Top each oyster with bacon pieces.
Bake at 400 degrees for 12 minutes, or until cheese is golden brown.
Use tongs or a spatula to remove oysters from baking sheet.
Serve and enjoy!
To Make Alfredo Sauce:
Ingredients:
1 pint Heavy whipping cream
1/2 cup Butter
1 1/2 cup Freshly grated Parmesan
Directions:
In a medium saucepan combine all three ingredients.
Cook over medium-low heat, stirring until smooth.
Remove from heat, sauce will thicken upon standing.
*If you have extra Alfredo Sauce, use it on your next pasta dish!
