"Mexican-Style Shrimp Cocktail"

Ingredients:

  1. 2 pounds of Cooked shrimp (Peeled & Deveined)

  2. 1/4 cup Fresh squeezed lime juice

  3. 2-5.5 fluid ounces of Tomato juice

  4. I bottle 8 fluid ounces Clam juice (Bar Harbor is my preferred brand)

  5. 1/2 cup Ketchup

  6. 1/2 cup Chopped fine red onion

  7. 11/2 tablespoon of Crushed garlic

  8. 1/2 cup of Fresh cilantro chopped (Extra for garnish)

  9. 2 tablespoon of Fresh ground horseradish or store-bought creamy style

  10. 1 teaspoon Hot pepper sauce

  11. Fresh ground black pepper, to taste

  12. 1 Large tomato, chopped

  13. 1 1/2 cups Cucumbers, chopped

  14. 1 Large avocado (Optional extra for garnish)

Directions:

  1. Mix all ingredients except for shrimp and avocado in large bowl.

  2. Add shrimp, then gently fold in avocado.

  3. Refrigerate 2 hours before serving.

  4. Serve in large bowl or in individual serving dishes.

  5. Garnish with extra cilantro & avocado.
