Melville Tavern's 3-Cheese Sandwich

Ingredients:

  1. 2 slices Seeded sourdough bread

  2. 2 slices Monterey Jack cheese

  3. 2 ounces Goat cheese

  4. 2 ounces Cotswold cheese (Find at Trader Joe’s)

  5. 3 ounces Tomato jam

  6. 3 ounce Sauteed spinach

  7. 1 tablespoon Butter

Directions: Building the Sandwich

  1. Place two slices of Jack cheese on first slice of bread.

  2. Top with tomato jam. (Recipe below)

  3. Top with goat cheese.

  4. Top with spinach.

  5. Top with Cotswold cheese.

  6. Add second slice of bread.

  7. Place a pan over medium heat, then add butter. Cook until melted.

  8. Place sandwich in hot pan, cook each side until golden brown, approximately 2-3 minutes.

  9. Plate sandwich using your choice of side. Suggestion: sweet potato fries or mixed green salad.

Add a tw ist: Build sandwich and make panini style

Ingredients: Tomato Jam

  1. 1 Shallot, diced

  2. 1 Jalapeno, seeded and finely chopped

  3. 1 teaspoon Cooking oil

  4. 5 Tomatoes, diced

  5. ½ cup Balsamic vinegar

  6. Salt and black pepper, to taste

Directions:

  1. In sauce pan on medium heat, add first three ingredients.

  2. Cook until softened, then add tomatoes. Cook for 30 minutes until slightly thickened.

  3. Take pan off heat, then add balsamic vinegar.

  4. Add salt and pepper to taste.
