“Limoncello”

Ingredients:

  1. 4 cups of vodka

  2. 1/2 cup lemon rind strips (approximately 7 lemons)

  3. 3 cups of water

  4. 1 1/2 cups sugar

Directions:

  1. Combine vodka and rinds in glass bowl with lid.

  2. Let sit two weeks in room temperature.

  3. Remove rinds; discard or pat rinds dry with paper towel.

  4. (Optional) Roll rinds in sugar, then place in a dehydrator and make candied lemon peels; use on desserts or for decorations on a cake!

  5. Combine water and sugar in large saucepan.

  6. Cook on medium heat until sugar dissolves, stirring occasionally.

  7. Remove from heat and cool to room temperature.

  8. Add ingredients to vodka mixture.

  9. Pour in sterile bottles and seal.

  10. When refrigerated, limoncello will keep for up to a year.
