Heidi’s Tzatziki Recipe published in September 2022
Ingredients:
1 large cucumber, Grated use large hole grater, Do not peel or remove seeds, Squeeze out excess moisture by hand
2 cups Plain Greek Yogurt
2 TBSP Extra Virgin Olive Oil
2 TBSP fresh Mint, finely chopped
Optional: 2 tsp fresh Dill or 1 tsp dried dill
1 1/2 tsp fresh squeezed Lemon juice
1 Clove Garlic, minced
1 tsp Sea Salt
Optional: White Pepper
Directions:
Grate the cucumber and hand squeeze extra moisture out ( Reserve liquid juice to make cucumber water, Optional: strain out seeds, Pour into a pint mason jar add cucumber liquid, water and a sprig of mint, keep refrigerated and enjoy sipping this refreshing and healthy water)
In a large bowl combine all of the ingredients mixing in gently the cucumber
Put in a mason jar or any air tight container, refrigerate at least 10-15 minutes to meld the flavors together before serving.
Keep refrigerated good up to 4 days, Enjoy!
