Heidi's Peanut Butter Turtles

Happy New Year! Thought I'd share my Peanut Butter Turtle recipe, it's an offshoot of the Snicker snacks that we published in 'In the Loop magazine a while back. I consider this a healthier snack. So easy to make and I've yet to find someone who doesn't love these tasty treats. Have fun making them, also another easy food project for kids to get involved with. Enjoy!


Ingredients:

  • 12 Pitted Dates

  • Creamy Peanut Butter, enough to smear on top of smashed dates

  • 1 cup Chocolate chips, light or dark

  • Peanuts, unsalted, roughly chopped

  • Flaky Sea Salt


Tools: Parchment paper, Tray, Scissors, Pounder-Flattener tool, spoon, microwaveable bowl.


Instructions: This recipe can be doubled, tripled,,,,

  • Prepare tray with parchment paper, set aside and cut extra piece and fold in half to use for pounding dates flat & together

  • Cut each date opened with scissors and press flat, take two and overlay only on the edges one on top of the other

  • Place between parchment paper and pound flat until they stick together, put on prepared tray

  • When finished with all of the dates, take a small spoon of peanut butter and smear evenly to cover each date is covered

  • Microwave the chocolate chips, 40 seconds at a time, stirring each time, until smooth and completely melted, it takes 3-4 times to melt the chocolate, make sure not to over microwave it'll burn

  • Time to work fast, take another spoon fill it with the melted chocolate and smooth on top of the peanut butter covering the entire top and sealing the edges

  • Sprinkle top of each with chopped peanuts and Flaky Sea salt

  • Let stand on tray until the chocolate completely sets hard

  • Store in an airtight container or cover a plate with plastic wrap, Enjoy!

  • Best to eat within 5 days
