I had extra LA CHOY Chow Mein Noodles and wanted something sweet so I decided to make up a chocolatey crunch treat. Now thinking since you're reading this in April what a fun Easter treat. Just make the nest with a dip in the center and add some mini robin candy eggs, how cute and tasty would that be. I made the nest stack topped with a bit of maldon sea salt. Turned out to be a perfect treat, something that would be wonderful to bring to any party. Enjoy!
Ingredients: depending on size 12-15 nests
2 cups La Choy Chow Mein Noodles
2 cups of semi sweet chocolate chips or desired chocolate flavor
1/2 cup roughly chopped peanuts, I use unsalted
1/2 cup dried Cranberries
Maldon sea salt, to garnish
Directions:
In a medium size bowl add chow mein noodles, peanuts, dried cranberries mixing altogether, set aside.
Line baking sheet with parchment paper & 2 tablespoons, set aside.
In a microwavable bowl add the chocolate chips, microwave on high 40 seconds, to prevent burning mix thoroughly after 40 seconds it takes 3 intervals for chocolate to be smooth and fully melted.
Pour chocolate over the chow mein mixture and gently mix cover all of the ingredients.
Using the two spoons, scoop size desired with one and use the other spoon to scoop off unto the parchment paper, at this point you can keep the nest stacked or make a hub in the center for the candy eggs. If using maldon sea salt sprinkle on top before chocolate dries, Keep in room temperature while chocolate sets to dry.
Plate your chocolate crunch nests and Enjoy!
